Comment by Pascal Leonetti, best sommelier of France 2006:
The robe is lemon yellow with light green reflections, of good intensity. The disk is brilliant, limpid, transparent.
The wine has a beautiful youthfulness.
The nose is frank, pleasant, of good intensity. One perceives a dominant of candied smells, overripe, centered on citrus fruits, grapefruit, lemon, exotic fruits, papaya, spices, ginger. The aeration amplifies the previous smells and lets appear a floral character, the rose, intensifies the exoticism, the lychee and the spices, the pepper of Sichuan.
The nose marks a superb quality of raw material, despite the insolation. The profile is refreshing and precise.
The attack in mouth is voluminous, dense and semi liquorish. The alcohol support is full-bodied. We evolve on a medium with a fine vivacity, a little bit pearly. The range of aromas reminds the nose, dominated by citrus fruits, lemongrass, grapefruit, exotic fruits, mango and lychee, flowers, rose and spices, candied ginger and Sichuan pepper. A fine bitterness is perceived. The finish has a nice length, 8-9 caudalies, as well as a fine vivacity and a persistent bitterness.
The balance has a rich and mellow profile. The freshness is exemplary and provides a form of perfection to this wine.
Ideal to pair with Thai cuisine, crab broth with Asian noodles, ginger and coconut milk, Chengdu chicken, a spicy Sichuan fish pot or a blue-veined cheese like Fourme d'Ambert .
